At 55º F this will produce a clean malty beer in the German tradition. Raise the fermentation temp to (65ºF) and this yeast produces the beers famous to San Francisco, known as “California Common”. It is unique in tolerating higher temperatures (65ºF) while maintaining a delicious flavor profile.
Suggested fermentation temperature: 58-65º F
Alcohol Tolerance: Medium-High (12%)
