Tartaric Acid - 1 lb Package
Tartaric Acid is the preferred type of acid for making Total Acidity (TA) adjustments in must or wine.
Useage: Adding 3.8g per gallon adjusts acidity by +.1% (1g/L). Some acid will drop out as potassium bitartrate if you do a cold stabilization. You might want to re-test total acidity after cold stabilization.
Tartaric acid is also used in cheese making to produce Mascarpone, an Italian soft cheese with a rich velvety texture and sweet delicate flavor. Mascarpone can be enjoyed with fruit and cakes as well as in many other desserts.
